Logisch ook, aangezien mijn familie verspreid leeft over\u00a0Itali\u00eb en Frankrijk. De feestdagen werden simpelweg gevierd met mijn ouders en grootouders. Geen grote tafels, geen luxueuze etentjes buitenshuis, gewoon onze netste kleren en wat speciale recepten.<\/p>\n<p>Gerookte zalm was voor mij een must. Tijdens het jaar kregen we nooit zalm voorgeschoteld, maar er ging geen Kerst voorbij zonder gerookte zalm. Deze voorspelbaarheid was fijn, het bood zekerheid. Maar de voorbije jaren probeert mijn moeder graag nieuwe dingen in de keuken. Elk jaar zitten we dus nerveus aan tafel.<\/p>\n<p>Om de traditie toch voort te zetten, en om een beetje zekerheid terug te winnen (zalm hoort nu eenmaal bij Kerst, toch?), besloot ik dit jaar om het voorgerecht te maken.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-1235 size-full\" src=\"http:\/\/www.radbag.nl\/blog\/wp-content\/uploads\/2015\/11\/sformatini-al-salmone-1.jpg\" border=\"0\" alt=\"Flan van zalm en broccoli\" width=\"600\" height=\"820\" \/><\/p>\n<h3><strong>Ingredi\u00ebnten<\/strong><\/h3>\n<p><em>Voor de flan<\/em><\/p>\n<ul>\n<li>100 gram roggebloem<\/li>\n<li>100 gram\u00a0heel fijne tarwebloem (tipo 00)<\/li>\n<li>50 gram boekweitmeel<\/li>\n<li>2 theelepels bakpoeder voor quiches<\/li>\n<li>100 gram broccoli<\/li>\n<li>100 gram zalm (vers of gerookt)<\/li>\n<li>2 eetlepels fijngehakte bieslook<\/li>\n<li>200 gram Griekse yoghurt<\/li>\n<li>80 gram olijfolie<\/li>\n<li>2 eieren<\/li>\n<li>zout en peper<\/li>\n<li>zwarte sesamzaadjes<\/li>\n<\/ul>\n<p><em>Voor de soep<\/em><\/p>\n<ul>\n<li>200 gram aardappelen<\/li>\n<li>50 gram broccoli<\/li>\n<li>1 eetlepel versnipperde ui<\/li>\n<li>zout en peper<\/li>\n<li>2 eetlepels olijfolie<\/li>\n<\/ul>\n<p><em>Extra<\/em><\/p>\n<ul>\n<li>zalmeitjes<\/li>\n<li>peterselie en bieslook ter garnering<\/li>\n<li>zure room (indien gewenst)<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-1233 size-full\" src=\"http:\/\/www.radbag.nl\/blog\/wp-content\/uploads\/2015\/11\/sformatini-al-salmone-2.jpg\" border=\"0\" alt=\"Flan zalm brocolli\" width=\"600\" height=\"796\" \/><\/p>\n<h3><strong>Bereiding<\/strong><\/h3>\n<p>Verwarm de oven tot 175 graden.<\/p>\n<p>Doe de bloem, het bakpoeder, de broccoli- en zalmstukjes, bieslook, en peper &amp;\u00a0zout samen in een kom.<\/p>\n<p>Meng in een andere kom de olie met de eieren en yoghurt.<\/p>\n<p>Voeg de vloeibare\u00a0ingredi\u00ebnten toe aan de bloem mix en meng tot je een mooi deeg krijgt.<\/p>\n<p>Bekleedt een bakvorm voor cupcakes\u00a0of koekjes met papieren vormpjes, giet het mengsel in de vormen, bestrooi ze met de zwarte sesamzaadjes, en laat ze ongeveer 15 minuten bakken. Test of ze klaar zijn door er met een tandenstoker in te prikken. Als je de tandenstoker er schoon terug kan uithalen, zijn ze goed.<\/p>\n<p>Terwijl de flans\u00a0bakken, kunnen we beginnen aan de soep.<\/p>\n<p>Verhit olie in een pan, bak de ui, en voeg vervolgens de fijngesneden broccoli en aardappelschijfjes toe. Laat 1 minuutje koken, voeg water toe tot alles bedekt is, en laat weer 10 minuutjes koken tot de aardappelen gaar zijn.
